Ingredients:
1 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 cup fresh blueberries
Instructions:
1.Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
2.In the small bowl of the stand mixer, combine the flour, sugar, baking powder, baking soda, and salt.
3.Add the buttermilk, vegetable oil, and vanilla extract to the mixer bowl. Mix on low speed until just combined.
4.Gently fold in the blueberries.
5.Divide the batter evenly among the muffin cups, filling each about 2/3 full.
6.Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
7.Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
