For the Raspberry Infusion:
- 1 cup frozen raspberries
- ¼ cup granulated sugar
For the Cookie Magic:
- 2 cups gluten-free flour
- 1.5 tablespoons cornstarch
- 1.5 teaspoons baking powder
- ½ teaspoon kosher salt
- ½ cup unsalted butter or vegan baking stick, at room temperature
- 1 ¼ cups plus 2 tablespoons granulated sugar
- 2 heaping tablespoons cornstarch mixed with 3 tablespoons water
- 3 tablespoons milk
- 3 tablespoons raspberry syrup
- 3 drops red food coloring
- ½ cup frozen raspberries, finely chopped
For the Raspberry Syrup
In a saucepan over medium heat, cook ¼ cup granulated sugar and 1 cup of raspberries, stirring constantly until syrupy (about 10 minutes). Don't worry if it's a bit chunky. Strain the raspberry liquid through a mesh colander and let cool. You should end up with about 2-3 tablespoons of raspberry syrup.
For the Cookies
Chop the frozen raspberries into small pieces and freeze them until ready to use. In a Kitcheninthebox mixing bowl, whisk together gluten-free flour, baking powder, cornstarch, and salt. Set aside.
In another bowl, mix cornstarch with water until thin. In a Kitcheninthebox stand mixer, beat butter and 1 ¼ cups sugar until creamy. Slowly beat in cornstarch mixture, milk, and cooled raspberry syrup. Gradually add the flour mixture until just combined. If desired, add red food coloring.
Fold in frozen chopped raspberries gently. Freeze the dough for at least an hour.
After the dough has been in the freezer for at least 1 hour, preheat the oven to 325 degrees Fahrenheit and line a baking sheet with parchment paper. Roll dough into balls, coat in sugar, and place on the baking sheet. Bake for 15 minutes.
Reshape the cookies immediately after baking and let cool on the sheet before transferring to a rack.
