Ingredients:
1 cup graham cracker crumbs
2 tablespoons melted butter
8 oz cream cheese, softened
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1 large egg
Assorted fruit or jam for topping
Instructions:
1.Preheat the oven to 325°F (165°C) and line a muffin tin with paper liners.
2.In a small bowl, mix together the graham cracker crumbs and melted butter until combined. Press about a tablespoon of the mixture into the bottom of each muffin cup.
3.In the small bowl of the stand mixer, beat the cream cheese, sugar, and vanilla extract until smooth.
4.Add the egg and beat until well combined.
5.Divide the cream cheese mixture evenly among the muffin cups, filling each about 2/3 full.
6.Bake for 18-20 minutes or until the edges are set and the centers are slightly jiggly.
7.Allow the cheesecakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
8.Once cooled, top each cheesecake with your choice of fruit or jam.
