Ingredients:
- 1 cup graham cracker crumbs
- 2 tablespoons melted butter
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 large egg
- Assorted fruit or jam for topping
Instructions:
- Preheat the oven to 325°F (165°C) and line a muffin tin with paper liners.
- In a small bowl, mix together the graham cracker crumbs and melted butter until combined. Press about a tablespoon of the mixture into the bottom of each muffin cup.
- In the small bowl of the stand mixer, beat the cream cheese, sugar, and vanilla extract until smooth.
- Add the egg and beat until well combined.
- Divide the cream cheese mixture evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until the edges are set and the centers are slightly jiggly.
- Allow the cheesecakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
- Once cooled, top each cheesecake with your choice of fruit or jam.
