Ingredients:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh blueberries
Instructions:
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In the small bowl of the stand mixer, combine the flour, sugar, baking powder, baking soda, and salt.
- Add the buttermilk, vegetable oil, and vanilla extract to the mixer bowl. Mix on low speed until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
